Ingredients:

1 cup of vegetable broth
2 tablespoons of soy sauce
1 teaspoon of sesame oil
1 teaspoon of minced garlic
1 teaspoon of grated ginger root
2 ounces of firm tofu, cubed
2 ounces of shiitake mushrooms, sliced
2 ounces of bok choy, chopped
2 ounces of bean sprouts
2 ounces of carrots, sliced

Cooking Instructions:

In a medium pot over medium heat, add the vegetable broth, soy sauce, sesame oil, garlic and ginger. Bring to a boil.
Add the tofu and mushrooms to the pot and simmer for 5 minutes.
Add the bok choy, bean sprouts and carrots to the pot and simmer for an additional 5 minutes or until vegetables are tender.
Serve hot in a bowl with steamed rice or noodles if desired.
