Ingredients:

1 tablespoon vegetable oil
1 clove garlic, minced
2 tablespoons fresh ginger, grated or minced
1/2 cup mushrooms, sliced
1/4 cup bamboo shoots, sliced
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
1/4 teaspoon white pepper
2 cups chicken broth or vegetable broth

Cooking Instructions:

Heat the vegetable oil in a medium saucepan over medium heat. Add the garlic and ginger and cook for about 30 seconds until fragrant.
Add the mushrooms and bamboo shoots to the pan and cook for another 3-4 minutes until softened.
Add the soy sauce, rice vinegar, sesame oil, white pepper and chicken broth to the pan and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Serve hot with a sprinkle of chopped green onions on top if desired.
