Ingredients:

2 chicken breasts (200g)
2 tablespoons of sesame oil (30ml)
1 tablespoon of soy sauce (15ml)
1 teaspoon of honey (5ml)
1 tablespoon of rice vinegar (15ml)
2 cloves of garlic (10g)
1 teaspoon of grated ginger (5g)
2 tablespoons of chopped spring onions (30g)
2 tablespoons of chopped coriander leaves (30g)
1 head of lettuce or other salad leaves (100g)

Cooking Instructions:

Preheat the oven to 200°C/400°F. Place the chicken breasts on a baking tray and season with salt and pepper. Bake for 20 minutes until cooked through. Allow to cool before slicing into strips.
In a small bowl mix together the sesame oil, soy sauce, honey and rice vinegar. Set aside.
In a large bowl combine the garlic, ginger, spring onions and coriander leaves. Add the sliced chicken strips and toss together with the dressing until everything is evenly coated.
Arrange the lettuce or other salad leaves on a plate or in a bowl and top with the chicken mixture. Serve immediately.
