Ingredients:

2 tablespoons olive oil
1/2 onion, diced
1 garlic clove, minced
1/2 red bell pepper, diced
1/2 cup frozen peas and carrots mix
2 cups cooked white rice
1/4 teaspoon ground cumin
1/4 teaspoon smoked paprika powder
Salt and pepper to taste
8 ounces cooked shrimp, peeled and deveined

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
Add the bell pepper and frozen peas and carrots mix to the skillet and cook for another 3 minutes.
Add the cooked white rice to the skillet and stir to combine all ingredients together. Cook for 5 minutes or until heated through.
Add the cumin, smoked paprika powder, salt, and pepper to taste to the skillet and stir to combine all ingredients together. Cook for another 2 minutes or until heated through.
Add the cooked shrimp to the skillet and stir to combine all ingredients together. Cook for another 5 minutes or until heated through.
