Ingredients:

200g all
purpose flour
100g butter, melted and cooled
2 tablespoons olive oil
1 teaspoon salt
150ml cold water
200g cream cheese, softened at room temperature
2 tablespoons chopped parsley
2 tablespoons grated Parmesan cheese

Cooking Instructions:

Preheat oven to 350°F (175°C).
In a large bowl, mix together the flour, butter, olive oil and salt until it forms a crumbly mixture. Slowly add the cold water and mix until it forms a dough. Knead the dough for 5 minutes until it is smooth and elastic. Cover the dough with plastic wrap and let it rest for 10 minutes.
In another bowl, mix together the cream cheese, parsley and Parmesan cheese until well combined. Set aside.
On a lightly floured surface roll out the dough to about 1/8 inch thick (3mm). Cut out circles using a 4 inch (10 cm) cookie cutter or glass cup and place them on a baking sheet lined with parchment paper.
Place 1 tablespoon of the cream cheese mixture in the center of each circle of dough and fold over to form half moons or triangles depending on your preference. Press down lightly around the edges to seal them shut then use a fork to crimp them closed if desired.
Bake for 25 minutes or until golden brown on top then remove from oven and let cool before serving warm or at room temperature. Enjoy!
