Ingredients:

1 cup of pre
cooked cornmeal
1/2 cup of grated coconut
2 tablespoons of olive oil
1/2 teaspoon of salt
1/4 cup of raisins
2 tablespoons of sugar
2 cups of water

Cooking Instructions:

In a medium saucepan, heat the olive oil over medium heat. Add the pre-cooked cornmeal and stir until it is lightly toasted.
Add the grated coconut, salt, raisins and sugar to the pan and stir until everything is combined.
Slowly add the water to the pan while stirring constantly. Bring the mixture to a boil and then reduce the heat to low. Simmer for 10 minutes or until all the liquid has been absorbed.
Remove from heat and let cool for 5 minutes before serving.
