Ingredients:

2 tablespoons of palm oil
1 onion, chopped
2 cloves of garlic, minced
1 red bell pepper, chopped
2 cups of okra, sliced into rounds
1 teaspoon of cumin powder
1 teaspoon of smoked paprika
½ teaspoon of ground coriander
½ teaspoon of turmeric powder
½ teaspoon of ground black pepper
1 cup of vegetable broth or water
2 tablespoons of tomato paste
½ cup of coconut milk
8 ounces of cooked shrimp (peeled and deveined)

Cooking Instructions:

Heat the palm oil in a large pot over medium heat. Add the onion and garlic and cook until softened and fragrant (about 3 minutes).
Add the bell pepper and okra to the pot and cook for another 3 minutes. Stir in the cumin powder, smoked paprika, coriander powder, turmeric powder and black pepper. Cook for another minute until fragrant.
Pour in the vegetable broth or water and tomato paste. Bring to a boil then reduce heat to low-medium heat and simmer for 10 minutes until vegetables are tender.
Stir in the coconut milk then add the cooked shrimp to the pot. Simmer for another 5 minutes until heated through.
Serve hot with rice or quinoa if desired! Enjoy!
