Ingredients:

2 slices of French baguette or other crusty bread
2 tablespoons mayonnaise
1 tablespoon sriracha sauce (optional)
2 ounces cooked pork or chicken, thinly sliced
1/4 cup pickled carrots and daikon radish
1/4 cup cucumber slices
1/4 cup cilantro leaves
1 jalapeno pepper, thinly sliced (optional)

Cooking Instructions:

Preheat the oven to 350°F. Place the baguette slices on a baking sheet and bake for 5 minutes until lightly toasted.
In a small bowl, mix together the mayonnaise and sriracha sauce until combined. Spread the mixture onto both slices of bread.
Layer the pork or chicken onto one slice of bread followed by the pickled carrots and daikon radish, cucumber slices, cilantro leaves and jalapeno pepper if desired. Top with the other slice of bread.
Cut in half and serve immediately. Enjoy!
