Ingredients:

200g lean ground beef
1 onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin powder
½ teaspoon oregano powder
½ teaspoon paprika powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons tomato paste
1 cup vegetable broth
4 whole wheat tortillas
½ cup shredded cheese (optional)

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish with cooking spray. Set aside.
In a large skillet over medium heat, cook the ground beef until browned. Add the onion and garlic and cook for an additional 3 minutes until softened.
Add the chili powder, cumin powder, oregano powder, paprika powder, salt and pepper to the skillet and stir to combine. Cook for an additional minute until fragrant.
Add the tomato paste and vegetable broth to the skillet and stir to combine. Simmer for 5 minutes until thickened slightly.
Place one tortilla on a plate or cutting board and spread ¼ of the beef mixture over it evenly. Sprinkle with cheese if desired then roll up tightly and place in prepared baking dish seam side down. Repeat with remaining tortillas and beef mixture until all four are filled and placed in baking dish seam side down.
Bake for 25 minutes or until golden brown on top then remove from oven and let cool slightly before serving warm with your favorite toppings such as sour cream or guacamole! Enjoy!
