Ingredients:

2 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
1 cup cherry tomatoes, halved
½ cup mushrooms, sliced
2 tablespoons balsamic vinegar
2 tablespoons fresh basil leaves, chopped
2 tablespoons extra
virgin olive oil

Cooking Instructions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rub the chicken breasts with olive oil, garlic powder, oregano, salt and pepper. Place on the prepared baking sheet. Bake for 20-25 minutes or until cooked through. Let cool slightly before slicing into strips.
Meanwhile, add the cherry tomatoes and mushrooms to a bowl. Drizzle with balsamic vinegar and toss to combine. Spread onto the same baking sheet used for the chicken and roast for 10-15 minutes or until lightly browned. Let cool slightly before adding to a large bowl along with the cooked chicken strips.
In a small bowl whisk together the basil leaves, extra-virgin olive oil, salt and pepper until combined. Pour over the salad ingredients in the large bowl and toss to combine everything together well. Serve immediately or store in an airtight container in the refrigerator for up to 3 days. Enjoy!
