Ingredients:

2 slices of whole wheat bread
2 ounces of halloumi cheese, sliced into thin strips
1/4 cup of bell peppers, diced
1/4 cup of red onion, diced
1/4 cup of mushrooms, sliced thin
2 tablespoons of olive oil
2 tablespoons of balsamic vinegar
Salt and pepper to taste

Cooking Instructions:

Preheat a grill pan over medium-high heat.
Place the halloumi strips on the preheated grill pan and cook for 3-4 minutes per side until golden brown. Set aside.
In a medium bowl, combine the bell peppers, red onion, mushrooms, olive oil, balsamic vinegar and salt and pepper to taste. Mix until all ingredients are evenly coated in the oil and vinegar mixture.
Place the vegetables on the preheated grill pan and cook for 5-7 minutes until lightly charred and tender. Set aside.
Toast both slices of bread in a toaster or on the grill pan until lightly golden brown.
Assemble your sandwich by layering the grilled halloumi cheese slices on one slice of toast followed by the grilled vegetables and top with remaining slice of toast. Serve immediately!
