Quinoa and Roasted Mushroom and Arugula Salad with Balsamic Vinaigrette

This delicious quinoa and roasted mushroom and arugula salad with balsamic vinaigrette is an easy vegan-friendly meal that is full of flavor! Ingredients:

½ cup quinoa
2 tablespoons olive oil
1 cup mushrooms, sliced
2 cups arugula leaves
2 tablespoons balsamic vinegar
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 375°F.
Rinse the quinoa in a fine mesh strainer until the water runs clear. Place the quinoa in a medium saucepan with 1 cup of water. Bring to a boil over high heat then reduce heat to low and simmer for 15 minutes or until all the water has been absorbed. Remove from heat and fluff with a fork. Set aside to cool.
Place the mushrooms on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper to taste. Roast in preheated oven for 15 minutes or until golden brown.
In a small bowl whisk together the remaining olive oil, balsamic vinegar, honey, salt and pepper until combined.
In a large bowl combine the cooked quinoa, roasted mushrooms, arugula leaves and dressing until everything is evenly coated in dressing. Serve immediately or store in an airtight container for up to 3 days in the refrigerator.
