Ingredients:

1/2 baguette
2 tablespoons of olive oil
1/2 cup of diced bell peppers
1/2 cup of diced zucchini
1/4 cup of diced onion
2 tablespoons of hummus
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 375°F (190°C).
Cut the baguette into two halves lengthwise.
In a bowl, mix together the bell peppers, zucchini, onion, olive oil, salt and pepper until all the vegetables are evenly coated.
Spread the vegetable mixture onto a baking sheet lined with parchment paper.
Bake in the preheated oven for 15-20 minutes or until the vegetables are lightly browned and cooked through.
Spread hummus onto both halves of the baguette and top with roasted vegetables.
